The country code for Japan is JP. The language code (nihongo) is JA.

Dunno about the others though, although it's a rather trival matter to
look them up in ISO 639. (Which is available online from many sources)

Of course, you could always use ISO 639-2 (the three letter codes),
which gives you a bit more room, but it doesn't seem to be widely
implemented.
