    I think it really is pronounced "I Heart Huckabees". See the title of
    the official page:

    Also, you can listen to the director talk about it on the site, and he
    says "heart".

    Finally, "I Heart Huckabees" wins the Google war at 309,000 hits to
    7,000. So that tears it. :)
