Non-Unicode Mac applications use the character sets listed at:
http://www.unicode.org/Public/MAPPINGS/VENDORS/APPLE/

In particular, you can find the encoding of MacRoman, used in the U.S.,
at:
http://www.unicode.org/Public/MAPPINGS/VENDORS/APPLE/ROMAN.TXT
