Unicode support on Macintosh?

Hello.

I would like to know about the support for UTF-8 in standard email
readers on moderately recent Apple Macs. The reason I am asking here
is that

a) the person I want to email is not technical enough I could ask him,

b) I do not really want to bother him with experiments possibly
resulting in garbled mail, without a good chance of success,

c) the email would profit from being UTF-8 encoded, in that we are
discussing Sanskrit and could, e. g., directly write Kharoṣṭhī instead
of Kharo.s.th-i or some such clutch [I presume people on the Unicode
list _can_ read this example].

Generally, some survey of out-of-the-box support of common operating
systems for Unicode would be very helpful for anyone hesitating to use
it in email.
